Salade de concombres et d'haricots
Pour le diner j'ai fait une bonne petite salade d'haricots. J'aime bien ce mélange de couleurs. J'ai utilisé des haricots mélangés. Il y avait des haricots rouges, des romains, à oeil noir et des pois chiches. Cette salade se prépare au moins une heure à l'avance car elle est bien meilleure si elle marine. C'est aussi une bonne source de fibres car les haricots ont 7g de fibres par 1/2 tasse. Je l'ai servi comme cela, sans accompagnements, car c'est un repas complet.

Cucumber & Black-Eyed Pea Salad
This is a recipe that you can make in no time with what you have in the frige. I made it for lunch today. It's better to make it one hour before lunch so that all the flavors mix well together. I decided to use a bean medley instead of only black-eyed peas. So in the medley there was red kidney beans, chick peas, romano beans & black-eyed peas. I serve this salad alone because it's a complete meal. This is a great source of fiber as per 1/2 cup you get 7g of fiber. This recipe is from the Eating Well website.
Recipe Black-Eyed Pea Salad, Eating Well
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons chopped fresh oregano, or 1 teaspoon dried
- Freshly ground pepper to taste
- 4 cups peeled and diced cucumbers
- 1 14-ounce can black-eyed peas, rinsed
- 2/3 cup diced red bell pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup slivered red onion
- 2 tablespoons chopped black olives
Mix all ingredients together. Let marinate for 2-3 hours before serving.
