This Frozen Peanut Butter Pie is very easy to prepare. It has a creamy filling and will satisfy your sweet tooth.
What I like about this dessert is that you can prepare it ahead of time, freeze it and serve it at your next party.
This dessert is refreshing, has just the right amount of peanut butter in it and with chocolate shavings on top you will satisfy your sweet tooth.
FROZEN PEANUT BUTTER PIE
Ingredients:
1 2/3 cups chocolate graham cracker crumbs (about 8 1/2 cookie sheets)
7 tbsps sugar, divided
2 large egg whites, lightly beaten
1 1/4 cups skim milk
2/3 cup crunchy peanut butter
1/2 tsp vanilla
1/2 cup light cream cheese, softened
1 (8-ounce) container frozen reduced fat whipped topping, thawed
3 tbsps chopped salted, dry-roasted peanuts
1/4 cup chocolate, shaved
Directions:
1- Preheat oven to 350F.
2- Spray a 9-inch deep-dish pie plate (pyrex) with PAM.
3- In the pie plate mix the crumbs, 3 tablespoons sugar and egg whites with a fork.
4- Prick the crust and place in oven. Bake at 350F for 10 minutes. Remove from oven and let cook at room temperature.
5- In a heavy saucepan mix the milk and 1/4 sugar sugar, cook over medium-low heat for 2 minutes until sugar is dissolved, stirring constantly. Transfer mixture to a medium bowl. Add peanut butter and vanilla and stir well.
6- Cover with plastic wrap and chill 30 minutes.
7- In the meantime beat the cream cheese in a large bowl at medium speed about 2 minutes. Add the milk mixture and beat on low speed about 1 minute until well combined. Fold in the whipped topping.
8- Pour the mixture into the pie crust. Freeze, uncovered, for 6 hours or overnight.
9- Decorate with peanuts and shavings of chocolate. You should put the pie in the refrigerator for at least 30 minutes before serving.
