French Onion Soup - Cooking with Wine

French Onion Soup


Sunday I have been busy in the kitchen cooking a delicious French Onion Soup with homemade baguettes for our Cooking Light Virtual Supper Club. This month the theme was cooking with wine. During my visit in Oregon, this summer, I bought a nice Chardonnay. This is the wine that I used for the soup.

The soup is time consuming, you need to plan ahead. The onions are slowly caramelized for 2-3 hours and then you start making the soup. The recipe says that it is for 8 servings but if you are eating the soup for a main meal it will serve 4. You can freeze the soup without the bread and the cheese.

Here is what everyone is cooking this month:

Shelby: Cheese Fondue with Apples

Val: Baked Rice with Butternut Squash

Jamie: Salmon with White Wine-Mustard Sauce

Aggie: Red Wine Pear Crisp with Spiced Streusel

I love french onion soup! I love the bowls you used for serving. I just made a big pot a couple weeks ago. It is time consuming to make, but definitely worth it.

I've been wanting a good french onion soup. The only thing I can say about this one is that in my house it would serve 2. I would probably eat that much. Your photo is gorgeous and appetizing.

Perfect time of year for French Onion soup. I love it! I have no doubt caramelizing the onions for 2-3 hours really intensified the flavor.

Gorgeous photo. This is my favourite soup. the last time I made it I accidently left it on the stove for five hours; it reduced a lot but it turned out perfectly. Cooking it for a long time really does meld the flavours together.

French onion soup is my favorite! I normally head to the farmer's market and just start buying different varieties to throw into the soup. Also, I love the slow 2-3 hour route versus the quick 30 minute route you see some people take. Not only does it break down those onions and make them super sweet but it adds so much more air freshener to the house.
