I am starting to think Holidays. Cookies are always a hit at my place. I like to test them before I bake them during the month of December. They make great gifts for family and friends.
White Chocolate Macadamia Cookies
500 ml all-purpose flour
2.5 ml baking soda
2.5 ml salt
180 ml butter, melted and cooled to room temperature
250 ml packed brown sugar
125 ml white sugar
1 egg
1 egg yolk
15 ml vanilla extract
375 ml chopped macadamia nuts
500 ml white chocolate chips

Preheat the oven to 325F. Line baking sheets with parchment paper or a silicone baking mat.
In a bowl, whisk together the flour, baking soda and salt and set aside.
In a large bowl or KitchenAid mixer beat together the melted butter, brown sugar, and white sugar. Beat in the egg, then beat in the egg yolk, then beat in the vanilla.
Gradually add the flour mixture to the sugar mixture until just moistened. Stir in the macadamia nuts and white chocolate chips with a rubber spatula.
Drop by heaping tablespoons onto baking sheets, and press down on the cookies with your palm to flatten.
Bake for 12-15 minutes or until the edges look golden brown and the middles don’t look quite set. Let cool before eating.
