We love Mexican food in my house. One year we had the chance to go camping for couple months in the South of US and we did eat our share of Mexican meals. When doing Mexican at home we like that we can choose our toppings and we all end up with something different in our plates. Taco nights are always popular, never met a child that did not like it.
If your meat is ready, when you get home prepare the fixings, place them on the table and everyone can make their own taco or fajita. Kids like to be creative and help with making their own food.
To do something different sometimes we have salmon in our tacos with coleslaw and it is delicious. My son will request it once in a while.
For my Fiesta Friday I made Chicken Fajitas. They are simple to prepare. Here is the recipe:
Chicken Fajitas
500g Boneless, Skinless Chicken
15 ml vegetable oil
2 bell peppers, sliced
1 onion, sliced
50 ml water
1 Old El Paso Fajita Dinner Kit
Shredded Cheese for topping
Sour cream, optional
Slice chicken. Heat oil in a large pan over medium-high heat until hot. Add chicken strips; cook and stir for about 5-7 minutes until completely cook and no longer pink in the centre.
Stir in peppers, onion, seasoning mix and water. Bring to a boil, reduce heat and simmer uncovered 3 to 5 minutes until vegetables are tender crisp, stirring frequently.
Warm Tortillas: Heat oven to 350F. Remove tortillas from package and wrap stack in foil. Bake 10 minutes. You can warm them in the microwave also: place on a microwaveable plate. Cover tightly with waxed paper. Microwave on High for about 1 minutes or until warm.
Place everything on the table and your family can prepare their own fajita. That is the fun part!
