Toffee Crisp Squares Recipe




We had a busy week-end. On Friday my cousin from Longueil, Québec did a surprised visit. We had lunch and spent the afternoon talking and having a good time.

On Saturday our local firefighters did a food drive. I am a volunteer at the food bank and that day we sorted all the food that the firefighters were collecting in five grocery stores. People in my area are very generous, we received high quality products. This helps a lot because every day we have new people coming to the food bank to get food for the month. If they make good choices they can feed their family with healthy meals. Saturday was hard work but I felt so good at the end of the day because I am doing this for families that really needs it.

When we woke up on Sunday the sun was shining. My husband and I decided to go cross-country skiing after breakfast. We chose a trail that was 90 minutes long to complete. There is nothing like spending the day outside, in the snow, smelling the fresh air. To end the week-end we had a nice stew for Dinner.

Last week I made this Toffee Crisp Squares dessert. The first time I made this dessert was years ago. I had forgotten how good it is. If you made it and keep it in the fridge it will be good for 3-4 days. This is a great dessert to prepare during the Holidays. You can even bring these squares as gifts. 



Toffee Crisp Squares

Ingredients
175 ml Rice Krispies cereal
125 ml all-purpose flour
75 ml brown sugar
1 ml baking soda
Pinch salt
75 ml butter, melted
1 can of 300 ml Eagle Brand sweetened condensed milk
125 ml brown sugar
125 ml butter

Topping
300 ml Rice Krispies cereal
250 to 500 ml Hershey's chocolate chips, melted

Directions
1- Preheat oven to 350F. Line a 9x9 pan with parchment paper.
2- Combine first five ingredients. Stir in butter. Press into the pan. Bake for 10 minutes.
3- In a saucepan, combine butter, Eagle Brand and brown sugar. Stirring constantly bring to boil. Reduce heat and simmer for 8 minutes, do not stop stirring because it will burn.
4- Spread over crust.
5- Melt the chocolate chips in microwave. Add the Rice Krispies and mix well. Spread evenly over the squares. Refrigerate until set. Cut into squares.
