The inspiration for this Cheddar Beer Soup with Potato & Bacon is from a Chef at the Superstore. He made a similar version, during a lunch class, and everyone liked it. I tried it home and did tweak it a bit. My parents came to visit in Ottawa and they enjoyed it. If you are going to host and would like to serve this soup, you came make it a day ahead but add the cream at the last minute.
CHEDDAR BEER SOUP WITH POTATO & BACON
Tasty Cheddar Beer Soup with Potato & Bacon. The addition of cream makes this soup velvety.
Ingredients
1 onion, quartered
2 carrots, cut in 8 pieces
1 garlic clove, minced
4 cups chicken broth
3 cups potatoes, cut in small cubes
1 cup beer
1 cup strong Cheddar cheese, shredded
½ cup Real Cream
4 slices bacon, cooked and crumbled
Green onions to decorate
Directions
1- In a large pot, place onion, carrots, garlic, chicken broth, potatoes and beer.
2- Bring to a boil. Cover and lower the heat to medium.
3- Cook until the potatoes are tender, approx. 20 minutes.
4- In the meantime, cook the bacon and when cooked crumbled the
bacon.
5- When the potatoes are tender place all ingredients in a
blender and blend well.
6- Return to the pot.
7- Warm the cream in the microwave.
8- Add cream and cheese to the ingredients. Stir well.
9- Serve and garnish with green onions and crumbled bacon.
