Summer season for us means a lot of camping, nights spent on the patio in the backyard, and BBQ. We had the chance to have someone that build a very nice interlock patio, last summer. We planted trees and flowers along the patio. It's so relaxing and peaceful. We finally bought a BBQ and we tried our favorite dishes like steak, chicken, potatoes, veggies. I also like salmon and this time decided to serve it in tacos. I like these tacos with a Mango slaw and sour cream.
Salmon Tacos with Mango Slaw Recipe
Ingredients
454g Salmon
500 ml cabbage, shredded
1 mango, diced
2 green onions, diced
15 ml lime juice
15 ml olive oil
5 ml honey
60 ml cilantro, chopped
Sour cream:
250 ml Gold Premium Sour Cream
60 ml cilantro, chopped
1 green onion, diced
15 ml lime juice
Directions
1- Mix the cabbage with mango, green onions, lime juice, olive oil, honey and 60 ml cilantro. Let stand at room temperature until ready serve.
2- Cook the salmon on the BBQ, skin-side down, until fish flakes easily with fork.
3- Meanwhile mix the sour cream with cilantro, green onion and lime juice.
4- When the salmon is cooked, cut into small pieces. Fill tacos with salmon, top with Mango Slaw and Sour Cream.
