At the food bank I spend the afternoon serving clients, restocking the shelves and walking a lot. When I come home I'm starving and I'm not in the mood to spend another hour on my feet in the kitchen. I would rather get comfy in a chair and relax. But we have to eat and I'm always looking for new ideas to make sure that I don't grab takeout on my way home. And I don't really have time to worry about what we will eat Thursday nights. Having said that, I want to make sure my family gets a delicious, nutritious meal.
Over the years I've learned that planning meals is important but it's time consuming and some weeks it's not possible to plan. That's why I have a list of Quick and Easy Summer Meals Ideas that are perfect for those busy nights. We also love to go camping in the summer and still like to eat tasty meals that are quick to prepare. That gives me more time to read a book, go for a hike or just sit by the fire at night.
I find it important to eat as a family because it's beneficial for the relationship with your children. Sharing a meal is an excuse to talk and to disconnect from the outside world. In our days of busy lives, most parents don't have time to cook after a long day at work. Below are two quick recipes for those busy nights.

SAUSAGES WITH PEPPERS AND ONIONS
My son came home tonight after work and said that my meal had big taste. I smiled because it was ready in no time.
All I did was sauté green peppers with onions and added Cardinal Ready cooked sausages. We had our meal with rice.
PULLED PORK SANDWICHES
They are delicious when I stuff the buns with Cardinal Ready Pulled Pork in Chipotle Sauce and broccoli slaw.
