Spiced Apple Cake with a Brown Sugar Sauce and Spiced Whipped Cream


This week, after a long walk in the woods, I made the best Spiced Apple Cake with a Brown Sugar Sauce and Spiced Whipped Cream. My husband could not wait for me to finish taking my pictures of my cake to have a big piece. By the look of his face I knew that the cake was good. This cake is so moist and it has just the right amount of spices. It's best to serve warm but if you have some cake left for breakfast the next day, don't hesitate to eat your cake at room temperature. It will be as good, as long as you warm the brown sugar sauce in the microwave before serving.  We will be hosting my family on New Year's Eve and I think they will enjoy this dessert. They have a sweet tooth and my dad loves whipped cream. Who doesn't?

Spiced Apple Cake with a Brown Sugar Sauce and Spiced Whipped Cream

Ingredients:

CAKE
1 1/4 cup all-purpose flour
2 teaspoon baking powder
1/2 teaspoon cinnamon (I like Saigon)
1/2 teaspoon salt
1/8 teaspoon nutmeg
3/4 cup sugar
3/4 cup sour cream
3 tablespoons canola oil
1 egg
1 teaspoon pure vanilla extract (I used Madagascar Bourbon Pure Vanilla Extract)
1 cup Cortland apples, peeled and diced

BROWN SUGAR SAUCE
2/3 cup brown sugar
1/3 cup sugar
1/3 cup cream 35%

SPICED WHIPPED CREAM
1 cup cream 35%
2 tablespoons sugar
1/2 teaspoon Madagascar Bourbon Pure Vanilla Extract
1/4 teaspoon cinnamon (I used Saigon)

Directions:
1- Preheat oven to 350F. Spray PAM in one Baker's Secret Round Cake Pan. Cut a round piece of parchment paper and place at the bottom of the round cake pan. Set aside.
2- In a medium bowl sift the all-purpose flour with the baking powder, salt, cinnamon and salt. Set aside.
3- In the bowl of an electric mixer fitted with the paddle attachment, beat the sugar, oil, egg on medium speed for 2 minutes. Add the sour cream and vanilla extract and beat one more minute at medium speed.
4- Add the flour mixture and beat 2 minutes add medium speed. Add the apples and beat 30 seconds. Scrape down sides of bowl as necessary.
5- Spread the batter into the pan. Bake at 350F for 30 minutes, or until a toothpick inserted in the centre of the cake comes out clean. Remove from the oven, let cool at room temperature for 15 minutes. Unmould on a wire rack. 
6- Brown Sugar Sauce: Place the brown sugar, sugar and cream in a medium saucepan. Cook over medium-low heat, stirring constantly, until sugars are dissolved and sauce has thickened, about 10 minutes. Remove from heat.
7- Spiced Whipped Cream: In a large bowl, whip the cream, sugar, vanilla and cinnamon until soft peaks form. If not serving right away keep in refrigerator.

Serve the cake with the brown sugar sauce and the spiced whipped cream.
