Banana Bread

You cannot have too many recipes for banana bread. I like to try new ones all the time. Of course, what makes a superior banana bread is how ripe are. Some people make the mistake of using bananas that are not quite ready to use in baked goods.

This is a very easy recipe that anyone can make, even my dad. When I visited my parents my mom said: ''Guess who made dessert today? Your dad! He made your recipe for banana bread.'' If my dad can make it, anyone can, and it's nice to see him bake now. He worked really hard on the farm when I was young and never had time to cook or bake. I was the one helping my mom in the kitchen and also my dad outside. After he retired, he started to help my mom in the kitchen. Now he is always proud when I go home and he makes something sweet for me. The recipe that I am sharing today is not the one I gave my dad but a new one. It's moist and it's even better the next day. I keep my banana bread on the counter and wrap it with foil overnight. My son loves to take a piece with him on his way to a hockey game.


BANANA BREAD

Ingredients:
3 ripe bananas, mashed
50 ml sugar
75 ml butter, melted
60 ml corn syrup
2 eggs
375 ml all-purpose flour
10 ml baking powder
5 ml salt
2 ml baking soda

Directions:
1- Preheat oven to 350F. Place parchment paper in a 8 x 4 inches loaf pan.
2- Melt the butter and set aside.
3. In a medium mix well with a fork the mashed bananas, sugar, butter, corn syrup and eggs.
4. In a large bowl whisk the flour, baking powder, salt and baking soda. Add the wet ingredients and mix well with a fork.
5. Place batter into loaf pan.
6. Bake at 350F for 50 to 60 minutes until a toothpick inserted in the middle comes out clean.
