I could eat Avocado Toasts for breakfast and lunch. I have been very busy lately and this was so quick to make and balanced both in nutrition and flavor. Now that we are having our hot summer days I don't feel like cooking a meal on the stove for lunch. I like to add radishes on my toasts for crunchiness.
AVOCADO TOASTS
Ingredients:
2-3 slices hearty grain bread, toasted
1 avocado
2 tsp fresh lemon juice
2 radishes, thinly sliced
Cilantro
Salt, to taste
Directions:
1- Mash the avocado flesh with the back of a fork. Mix in the lemon juice.
2- Divide the avocado mixture on top of the bread.
3- Top with radishes and cilantro. Add salt to taste.
