Homemade Chicken Noodle Soup


You don't need to spend hours in the kitchen to make a delicious Chicken Noodle Soup. My son sent me a message, yesterday, saying that he wasn't feeling well. The weather has been bad around here. Usually in April we have warmer days. I wasn't surprised that he caught a cold. I decided to make this soup for supper. To help with the prep time I used rotisserie chicken.


HOMEMADE CHICKEN NOODLE SOUP

Ingredients:
2 cups shredded rotisserie chicken
4 carrots, diced
2 branches celery, diced
1 onion, diced
2 tablespoons olive oil
8 cups low-sodium chicken broth
1 1/2 cup egg noodles
salt and pepper, to taste
1/2 cup chopped fresh parsley

Preparation:
1- In a large saucepan, over medium heat, sauté the carrots, onions and celery in the olive oil for 5 minutes.
2- Add the chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer for 10 minutes to soften the vegetables.
3- Add the chicken, noodles and the parsley. Simmer until tender, about 8-10 minutes.
4- Decorate each bowl of soup with chopped parsley. Serve.
