Chicken Feta Meatballs


I usually make my meatballs with ground beef and veal but this time decided to make something different. I am using ground chicken to make these Chicken Feta Meatballs. It's a quick meal, perfect for a weeknight when you are rushing to put dinner on the table.

You can make a double batch and freeze half of it for when your schedule is packed and you don't have time to stop at the grocery store on the way home. It could also be a great dish to bring to a potluck. You can serve the meatballs with your favorite tomato sauce or to speed things up you can use a store-bought sauce.


CHICKEN FETA MEATBALLS 

Ingredients
450 grams ground chicken
125 ml oats
60 to 90 ml crumbled feta cheese
15 ml tomato paste
1 clove garlic, minced
1 ml allspice
Salt and pepper to taste
500 ml tomato sauce
125 ml parsley, chopped
Zest of lemon to add to the tomato sauce


Directions:
1- Preheat oven to 400F.
2- In a large bowl mix the ground chicken, oats, feta cheese, tomato paste, garlic, allspice, salt and pepper.
3- Form 1-inch balls. Drop on a cookie sheet.
4- Place in the oven and cook for about 15 minutes, until no longer pink. Remove from oven.
5- In a large saucepan place the meatballs. Cover with the tomato sauce, zest of lemon. Bring to a boil, cover, reduce the heat to medium-low and cook for about 10 minutes, until the ground chicken reaches 165F.
