Greek Salad Hummus Pizza


Someone recently asked me how I come up with my recipes. I replied that I dream about them or that I have ideas floating in my head all day long. In my dreams is also a lingering smell of spices that enveloped me when I had the privilege of visiting Sabra in June. During the visit we entered a room where two ladies were working and we were in spice paradise. It smelled so good that I could have stayed in that room all day, but we had to continue our visit. It's the kind of place where you close your eyes and let your senses guide your imagination. One minute I was on a camel crossing the desert and the next I was visiting a market in Israel.

During the tour I met people as passionate as me about food. They are committed to offering customers the best product and are using fresh ingredients. When you walk around and everyone is smiling, that's a good indication that they like the environment they are working in.

I am very proud that they have chosen me to become part of the first group of #tastemakerCAN program. In the coming months, I will be sharing my delicious creations using their products. Last night I made a Greek Salad Hummus Pizza. When my son came home he said: that's a pizza? I smiled and said yes it is! After his first bite he said that is was incredibly fresh and tasty. Guess what we are having for lunch today? My other son came home for lunch and we will be eating this delicious, healthy pizza again.

GREEK SALAD HUMMUS PIZZA

Ingredients:
2 large pita bread
283g Sabra Roasted Red Pepper Hummus
2 cups arugula
1 cucumber, diced
12-14 mini tomatoes, diced
1/2 red onions, sliced
1/2 cup feta cheese, diced
2 tbsp Olive Oil
1 tbsp fresh lemon juice
1 tsp oregano
2 garlic cloves, minced
salt to taste

Directions:
1- In a large bowl whisk the oil, lemon juice, oregano, garlic and salt. Add the tomatoes, cucumbers, red onion and feta cheese. Mix well.
2- Top the pitas with the hummus, arugula and the Greek Salad. Serve. Enjoy!
